A guide to iconic dishes the city has cooked up, adopted and adapted

Bengal's relationship with food runs deeper than most. Over centuries, the region has absorbed influences from Mughal courts, British officers' clubs, Chinese settlers, Armenian traders and its own vast rural kitchens — and turned each of them into something that tastes entirely local. What might have arrived as someone else's recipe almost always stayed on as Bengal's own.

The City of Joy sits at the heart of this. A city that has kept its own traditional dishes alive with genuine devotion while simultaneously adopting, adapting and falling for food from everywhere else and making them quintessentially Kolkatan.

Here are a few unmissable, iconic dishes of Kolkata. If you're from the city, these are some of the flavours you know and love. If you're visiting, they are the tastes you'll remember long after you leave.

Alongside its rich culture and heritage, Kolkata's food is an experience in itself — one that is best discovered one dish at a time.

Phuchka

Sharper, tangier and more unruly than its cousins elsewhere, Kolkata’s phuchka is one of the city’s iconic street snacks. The wafer-thin shells, the tangy tamarind water often mixed with a dash of Gondhoraj Lime, the heat of green chillies and that ultra-savoury potato and chickpea filling make it a street-side ritual. You eat one, then another, and somehow the count is always higher than intended.

And if you have space for more definitely try the churmur — all of the above ingredients crushed and mixed into a crunchy, spicy and tangy mash worth salivating over.

Jhalmuri

Few things are as unmistakably “Bengal" as a paper cone of jhalmuri. Perfectly light puffed rice, mustard oil, green chilli, peanuts and whatever else the muriwala has at hand (cucumber, tomato coriander leaves, chanachur, et al.) come together to make magic in a few vigorous tosses. Shared in handfuls across friend circles, or munched alone, it is the snack of the city  — inexpensive, immediate and impossible to eat quietly.

A toned-down version is also eaten as an evening snack at home with a cup of tea.

Pro-tip:

Definitely opt for the thin slice of fresh coconut — a sweet-crunchy topping, which ties the whole spicy muri-eating experience together.

Kathi Roll

Kolkata’s answer to eating on the move? The great Kathi Roll. What started as wrapping kebabs in paratha to make it less messy and more convenient for British officers pre-Independence, became a snack synonymous with the city. It even scored the sixth place on Taste Atlas's prestigious list of the world's best street food items.

‘Kathi’ simply translates to ‘stick’ denoting the bamboo skewers used to roast kebabs. However, today one can pretty much customize the kind of roll filling they want. From mutton and chicken kebabs to fish, from eggs to paneer and alu! Or even a mixed bag of a few clubbed together!

Whatever fills the roll, the essentials remain the same: a hot flaky paratha, sharp onions, green chilli and a squeeze of lime, sauce optional.

Fish Fry

Few things capture Kolkata’s colonial-era culinary imagination quite like the bhetki fish fry. Fresh bhetki fillets, marinated in onion, chilli and ginger-garlic paste, coated in egg and breadcrumbs then deep-fried till golden. This starter/snack has found pride of place in the city’s fried food directory — be it at a wedding or a mid-shopping spree halt. Hot from the fryer, served with kasundi on the side for the zing and a few slices of onion and cucumber for the bite, Fish Fry remains one of Kolkata’s most dependable pleasures.

Moglai Porota

Yet another unique paratha adaptation that has made its place in every Bengal foodie’s heart. Generously stuffed with minced meat and coated with egg, this fried, generously spiced square-shaped porota belongs to the city’s old cabin culture and its love for food that is both indulgent and unfussy. Today, found across almost all eating spots, this iconic dish is served with alur sabzi, freshly julienned cucumber and onion salad, and a little kasundi or ketchup on the side.

Kabiraji Cutlet

The name is generally linked to the Bengali adaptation of the English “coverage cutlet”, but the roots come straight from Kolkata’s cabins. And unlike its crumbed cousin, this Kolkatan cutlet comes covered with a delicate, lacy egg coating, while the fish/chicken or mutton beneath keeps it solidly familiar.

Chicken/Mutton Cutlet

The Kolkata cutlet belongs to everyone — the city’s narrow lanes, wide markets, small cabins and even fancy cafés. Over time, this European-style snack has acquired a distinctly local character. Crisp, crumb-coated outside, deliciously juicy within, with a filling of savoury chicken or rich mutton. Usually served with kasundi, this dish has remained a staple across generations.

Kolkata Biryani

This legendary dish’s origin story is connected to Nawab Wajid Ali Shah’s arrival in Bengal in 1856, bringing the Awadhi culinary tradition with him. Perfect proportions of seasoned rice layered with meat that falls off the bone, a boiled egg, and its own unmistakable signature: the potato. Served across the city, Kolkata biryani is one dish that is known to make or break friendships. Yes, Kolkatans are really protective about their biryani.

Kolkata Chilli Chicken & Chow Mein/Fried Rice

Chilli chicken — lightly battered and fried chicken stirred in a rich, spicy, tangy soy-rich sauce — with helpings of wok-tossed chow mein or fried rice have become staples of the distinctly Kolkata style of Indo-Chinese cooking. The result is saucier, spicier and more generously seasoned than its traditional Chinese antecedents, and completely at home in the city.

Chicken à la Kiev

Chicken à la Kiev is a reminder that Kolkata’s food history extends well beyond Bengali kitchens. Tender chicken breast, wrapped around seasoned butter, crumbed and fried, so that cutting into the crisp exterior releases a rush of hot, fragrant butter. It found a lasting home in the Park Street restaurants of the city, where it has been a favourite for decades.

Devilled Crab

Devilled crab is another reminder that Kolkata’s culinary history cannot be contained within one cuisine. Crab meat is seasoned, enriched and cooked before being returned to its own shell, creating a dish that is as much about presentation as flavour. Its rich, old-world charm has made it a lasting favourite on Kolkata’s Continental dining tables.

Lobster Thermidor

Lobster Thermidor is French by birth and dates to the nineteenth-century, but it has become part of Kolkata’s own Continental repertoire. An all-time Park Street favourite for generations, the classic preparation combines lobster meat with a rich sauce, often involving mustard, wine or brandy. The mixture is eventually returned to the shell and gratinated until golden. Yet another iconic example of Kolkata's love of food beyond borders.

Ilish Bhapa

This dish is a monsoon delicacy across households in Kolkata. With the first bite is almost instantly recognisable: pungent, rich and unmistakably Bengali, it is best paired with hot rice.

Daab Chingri

Daab Chingri brings together some of Bengal’s most loved flavours in an unusually creative manner. Juicy golda chingri (giant freshwater prawns) are marinated in a paste of shorshe (mustard), posto (poppy seeds) and daab (tender coconut) water and flesh, then cooked right inside the tender coconut shell, allowing the flavours to seep in as they cook. The result is a distinctive, rich flavour and creamy texture that complements the prawns without overwhelming them.

Kosha Mangsho with Luchi/Pulao

Few Bengali dishes announce a Sunday or any other celebratory occasion quite like Kosha Mangsho. Mutton is browned slowly with onions, ginger, garlic and spices until the gravy reduces into a dark, glossy coating clinging to every piece of meat. For some, Basanti Pulao is the accompaniment of choice; for others, the meal is simply not complete until the Kosha Mangsho has made an appearance with hot and fluffy luchi.

Jolbhora

For those who love to end their meals on a sweet and juicy note, Jolbhora is just the dessert to try. This Bengali sweet comes with a little trick up its sleeve, and the surprise is half the pleasure. Celebrated by confectioners and consumers alike, it looks like a simple piece of sandesh from the outside until its centre gives way to the syrupy jaggery or other seasonal fillings which gushes out with each bite. This is especially a must-try in winter when the filling is rich, liquid Nolen Gur.
